Recipe: Green Potato Curry


I call this green potato curry because I use green curry paste for this one. And the spinach makes it pretty green too ;) It is easy and vegan.


Green Potato Curry: (serves 4)
- 1 large sweet potato
- about as many potatoes as the sweet potato in grams
- 1 small cauliflower
- 3 large handfuls of spinach
- 1 red bell pepper
- 1 to 3 tbsp green curry paste (this depends on the brand you have, so taste)
- 400 ml coconut milk
- fresh cilantro
- For serving: naan bread, rice, or some eggs (of course not if you are vegan)

Peel both the potatoes and sweet potatoes, cut in the cubes and cook until tender. Break the cauliflower into small chuncks and cook those as well. Cube the bell pepper. In a wok, first fry spinach, if it is slunk, add the bell pepper and fry some more. Add the coconut milk and green curry paste. And stir through. This is the moment to taste and adjust seasoning. Then add all the potatoes and the cauliflower. Lastly add some fresh cilantro to taste. 

You can also make this for 2 days, it keeps really well. We served it with naan the first day as shown on the picture and the 2nd day we ate it with some boiled eggs.
