On a Budget: Broccoli Potato Pie

How I love finding new and tasty recipes that fit a small budget! This is a bit like a quiche, but it doesn't have a crust. This recipe is easy and most of the time you can just sit there, letting the oven do all the work. Perfect! The original recipe comes from Veggie Variation. A great plus is that this pie is sturdy and not mushy like some quiche recipes.


Broccoli Potato Pie: (serves 4)

- 500 gr broccoli
- 600 gr pre cooked potato slices
- 3 eggs
- 200 gr lean quark
- 2 cloves of garlic, minced
- 100 gr grated cheese
- salt and pepper

Pre heat the oven to 200 degrees. Peel the stern of the broccoli and cut in slices. Cut the rest in florets. Boil the broccoli for 5 minutes. Line a 24 cm spring form with a baking sheet and dived potatoes and broccoli in there.
Beat the eggs and mix in quark, garlic, half of the cheese and some salt and a royal dash of pepper. Pour the mixture in the spring form and top it off the the rest of the cheese. Bake for 40 minutes in the oven.
